This foundational five-part course invites you to explore the kitchen as a sanctuary, a space for creativity and connection. Through basic techniques, chart your own kitchen adventures, and deepen your relationship to the cycle of the seasons, grounded in timeless methods that have served home cooks through generations. 

We will focus on local, seasonal ingredients that address our appetites influenced by weather and place. Together we will cook, source and grind spices, make stock, and introduce other surprisingly easy practices that enhance and deepen flavor. 

Cooking is an ancient skill that offers both practical and daily benefits and profound satisfaction. This course is for all levels, whether you are just starting out or looking for new and simple ways to level up your meals. This class is for you!

Each video in the Bare Bones Cooking series speaks to a new foundational technique — offering a different cast of ingredients to tell the story:

Beth Dooley

Beth Dooley is a “writer who loves to cook,” based in Minneapolis, MN. Her first cookbook was with Lucia Watson, of Lucia’s Restaurant, Savoring the Seasons of the Northern Heartland. Beth went on to write over 13 cookbooks, one of which, co-authored with Chef Sean Sherman, won the James Beard Award for Best American Cookbook — Sioux Chef’s Indigenous Kitchen. Beth is an endowed chair at MISA, the Minnesota Institute for Sustainable Agriculture.

For Beth, food is a means for navigating and sensing the world. She wants readers to feel the urge to get up and cook something through simple, plant forward recipes and techniques that spotlight local producers.
